2 more recipes

I have a confession to make... I do not love cooked tomatoes. I have never liked tomato soup, sloppy joe's or other things with that cooked tomato flavor.

That is why these recipes are so great. They are tomato-y without that overpowering flavor I dislike.

Number one: Sloppy Joe's
I started off with this recipe

I make mine with 1/2 turkey 1/2 beef.
I double the ketchup, sugar and mustard.
I add 1/2 tsp of dry mustard
2-3 shredded carrots (saute with the onions if you can remember- I usually forget and add them later)
1 can of rinsed beans (black or kidney)

now FYI you MUST toast the hamburger buns, otherwise these are gross :)
Oh -I don't always have bell peppers in my fridge so I don't use those generally.


My kids enjoy them and are they are good as leftovers.
My other recipe: Tasha's Tortilla Soup

Here is her recipe I follow it exactly (high praise from me who changes everything)

Yummy Tortilla Soup
2 skinless, boneless chicken breasts
1/2 tsp. olive oil
1/2 tsp. minced garlic
1/4 tsp. ground cumin
2 (14.5 oz.) cans chicken broth
1 cup frozen corn kernels
1 cup black beans
1 cup chopped onion
1/2 tsp. chili powder
1 Tb. lemon juice
1 cup chunky salsa
Tortilla Chips
Cheese
Sour Cream (optional)
Chopped Avocado (optional)
Cilantro (optional)

Saute chicken in oil for 5 minutes. Add garlic and cumin. Mix well. Then add broth, corn, onion, chili powder, lemon juice, and salsa. Reduce heat to low and simmer for about 20-30 minutes. Top with cheese, tortilla chips, sour cream, avocado, and cilantro.


So my husband was chatting it up with our neighbor that eveing so it simmered down more than it should have...

Too bad I forgot to sprinkle cheese on top.
We made a single batch for dinner on Monday and there were no leftovers. Wish I had some right now. SO SO GOOD.
